Examination Board: WJEC
This is a relatively new course which is being offered to take advantage of the top class teaching and catering facilities we have in the Academy. It offers a unique opportunity for students to develop their knowledge, skills and capacity for imaginative thinking. If you are interested in cooking and catering industry as a profession or just enjoy being in the kitchen, this could be the course for you.
The topics covered include:
- The Catering Industry (the variety of catering outlets, safety and food poisoning).
- Nutrition and Menu Planning (selection, storage, food costing and menu construction).
- Food Production (preparing, presenting and serving food and drink).
- Health and Safety, Food Hygiene and the role of an Environmental Health Officer.
How is this course assessed?
During the course, you will need to keep a practical cooking log of weekly tasting and evaluation of all menus. This is done through photographs and a short evaluation which you will upload onto an online secure portal.
You will also complete a termly theory quiz based on the knowledge and skills that you have gained as well as one online course in food hygiene and safety, which will be completed during the first term.
The final assessment involves two 2-hour practical examinations and a short 20-mark theory test.
This is a valuable qualification to put onto an application for Sixth Form or other Further Education course and will help secure a wide range of employment opportunities in the food sector.
